What Americans Need to Know About Wheat Part 1


I used to struggle with eczema when I was younger and no amount of steroid creams helped. It was embarrassing when my eczema breakouts showed up on my neck, arms, and legs, and it really crushed my self esteem. Plus that itchy feeling throughout the day and into the night really tormented me. It wasn't until I started to go on a gluten free diet that my eczema flare ups went away. I was reading things about how gluten triggers all kinds of problems. I would avoid foods that contained wheat because gluten is a protein that is found in wheat. This meant no more pasta, ramen noodles, pastries, cookies, hamburgers, and pizza for awhile. For me going on a strict gluten free diet helped clear up the eczema flare ups and I no longer needed topical steroid creams.


Why exactly is wheat so harmful especially in America? I've talked with other people that follow a gluten free diet, and they said that eating bread in other countries doesn't give problems. But it was mainly in America that they were careful to go gluten free. In my research, I learned that the wheat in America is problematic because of the chemical glyphosate that farmers spray on their crops. If you want to read more in depth about just how bad modern wheat is for you, then I recommend you check out the book Wheat Belly by William Davis. Davis is a cardiologist and he describes "modern wheat," as a "perfect chronic poison." Modern wheat can cause all kinds of health problems including rashes, high blood pressure, bulging bellies from weight gain, and other inflammatory problems like arthritis. In his book he described how he observed over 2000 patients regain their health to optimal levels once they give up gluten. Check out the link below. Davis, W. (2014). Now I am not a masochist and I am not always following the strict gluten free diet 100%. Sometimes I'll have cheat days when I am at a social gathering or if i just had a craving. If someone bakes a homemade cake or cookies containing wheat, of course I allowed myself to have a treat. A few bites of bread occasionally doesn't hurt, but if I overdid it, then I did experience eczema flare ups again. But I believe I have found a solution to the wheat problem. I will explain more in part 2 so stay tuned!
