In my previous post, I talked about why gluten is so bad for you. But I don't want to talk about problems only without a solution. Now bread has been a staple of the human diet for thousands of years and seems like our ancestors were just fine. Surviving long enough to produce offsprings. Bread back then was actually healthy for you and even in some countries it still is.
Now I don't recommend just automatically going for whatever is labeled gluten free. Sure, there's a lot of gluten free bread out there, but many times the substitute for gluten isn't always better. I can explain more in another blog post, but corn, soy, and even brown rice which are often used as wheat substitutes are also problematic for your thyroid health. My verdict on gluten free labeled breads is that it feels like hit or miss, so I just skipped gluten free bread all together. I don't like being the bearer of bad news but most other grains are bad for you. Now, if you notice in the picture above, it's supposed to be a basket of sourdough bread. When I discovered how sourdough bread is made, I learned that the fermentation process somehow makes gluten less harmful. So people who struggled with celiac disease or a gluten intolerance were able to handle sourdough bread with no problems. I decided to try out sourdough bread, and I was actually afraid at first. I think I was so afraid that I imagined symptoms eczema symptoms . But after I learned to control my fear, I retried sourdough bread and didn't experience symptoms. But when I tried to re-introduce regular wheat, I still experienced symptoms.
My verdict on sourdough bread is that is it not harmful for you. But it is still a carb which raises blood sugar, so treat it as you would with all other carbs. I wish I knew how to bake my own sourdough bread but because I don't I get them from the grocery store. I look for brands that are non-gmo and organic like Izzio, because I've simply been able to tolerate and enjoy them without symptoms. Even if you don't struggle with celiac disease I would still recommend reading the books I mentioned earlier. Experiment with the grain-free diet AFTER reading the books and see if your health improves.
